Creamy, smoky harissa chickpeas simmered with kale, warming spices and herbs, then finished with a silky tahini tofu cream. High in plant protein and fibre, quick to make, and perfect for meal prep or easy weeknight dinners.

Ingredients

For the chickpeas:
  • 1–2 tbsp olive oil
  • 1 medium onion, diced
  • 3–4 garlic cloves, minced
  • 2 tbsp harissa
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 tins chickpeas, drained and rinsed
  • ½ cup vegetable stock
  • 2 packed cups kale, chopped
  • Large handful coriander, chopped
  • Large handful parsley, chopped
  • Juice from ½–1 lemon
  • Salt and pepper, to taste
For the cream:
  • 300g silken tofu
  • ⅓ cup nutritional yeast
  • ½ cup vegetable broth
  • 2 tbsp tahini
  • Pinch of salt

Instructions

  1. Heat the olive oil in a pot over medium heat and sauté the onion for 4–5 minutes until softened. Add the garlic and cook for 1 minute more.
  2. Stir through the harissa, smoked paprika, cumin, and oregano until the onion mixture is coated and fragrant. Add the chickpeas and vegetable broth, cover with a lid, and simmer for 4–5 minutes.
  3. Meanwhile, add all of the cream ingredients to a blender and blend until smooth and creamy.
  4. Add the chopped kale to the pot and cook for 2–3 minutes until softened.
  5. Stir through the cream and heat gently for a few more minutes.
  6. Remove from the heat and mix through the coriander, parsley, lemon juice, salt, and pepper to taste. Serve and enjoy.
