8 Creamy High-Protein Bean Recipes Perfect For Meal Prep (Vegan)

I am very much enjoying the fact that beans are trending at the moment. As an almost 10-year vegan and lifelong vegetarian, I’ve eaten a bean or two in my time… and it has been really lovely to see these recipes getting so many saves, shares, and lots of new followers.

Because of that, I thought it would be helpful to bring them all together in one place - a little collection of my favourite high-protein, high-fibre, batch-cook/meal-prep friendly bean-based meals of recent times.

Beans are already a good plant-based protein source, but for an extra boost, I’ve been adding silken tofu to create a creamy, protein-rich sauce that runs through all of these recipes. It’s become a bit of a signature throughout this series, making each dish extra creamy and satisfying.

  1. Golden Anti-inflammatory Chickpeas

The first episode of the series.. They are extra creamy thanks to the combination of silken tofu and creamed coconut, and mildly spiced. I love pairing them with baked potatoes and into packed lunches with grains and salads.

The most popular recipe of the series with 17,000 saves on Instagram and counting! They are rich, creamy, and indulgent tasting, while being super nutritious, and pair SO well with gnocchi.

These are ridiculously creamy from the combination of silken tofu, blended roasted red peppers, and tahini cream - making them perfect for mopping up with bread. They also pair very well with some crispy potatoes!

Packed with rich, herby, umami flavours, these cannellini beans are up there as one of my faves.. and I’m not even crazy about mushrooms. Serving them on toast is one of my favourite weekend brunches.

Smoky and lightly spiced with cumin, paprika, and harissa, these are perfect mopped up with some pita bread or and/or served with roasted veggies. Rose harissa works really well for this!

My second most popular recipe of the series and the highest in protein, with a huge 29 grams per serve. They are lightly spiced, herby, and pair really well with sundried tomato rice.

This was my first time adding peanut butter into beans and it works so well! They are silky smooth and work perfectly in tacos and rice bowls.

Aaaand last but not least, these deliciously creamy, herby cannellini beans that work great as a pasta sauce. They are seriously addictive and quite similar to number 2.
